Being a food of desire, oyster is associated with pleasure and abundance. However, concept of sweet oyster was inspired by fauvism movement, Matisse`s art and connection with nature. Panna cotta gives it a slick texture likely to an original prototype. This dessert is a process: lemon should be squeezed before consumption, so it reveals the taste. Every tart shell is hand-shaped and never repeats.
